Mac Does Impressions

Best. Turkery. Burger. Ever.

And that is a quote from my husband who love love loves cow meat. I have made these turkey burgers a few times before and each time I have added something extra making them better every time. We love them and I don't make them enough so Monday when we had them for supper and they were ridiculously good I thought I would share the recipe (I don't think I have before but I am too lazy to go back and double check).

Blue Cheese and Mushroom Turkey Burgers
1 lb turkey
8oz fresh mushrooms, chopped fine
1 small onion, chopped fine
Blue cheese crumbles, I use the entire tub around 4oz
2 tbsp soy sauce
salt and pepper to taste
1/2 package of real bacon bits (or more)
1 avocado, smashed, salt and pepper to taste
Lettuce
Cheese slices

Chop mushrooms and onion, put in large bowl. Add soy sauce, bacon bits, blue cheese crumbles and salt and pepper. Mix turkey into veggies. I use my hands. Ball turkey into burger patties and pan fry until done.

Makes 6 medium size patties or 4 large patties.
I use bread crumbs as needed for the turkey to stay together, I don't always use them and the burgers have been just fine.

Toast burger buns.
Bun. Mayo. Turkery burger. Cheese. Avocado. Lettuce. Bun.
Enjoy.

Funny Thing

Tuesday (yes, Tuesday. Are you really that surprised I am running behind) on the way home from work and picking up Mac I got a little surprise while driving on the on ramp to the upper deck of IH35. Wanna see?

Yeah. That's my son posted up on the console while we are driving down the road. Now before you freak out and call Child Protective Services remember that this is rush hour traffic and we were probably topped out at about 20 mph if we were moving at all (thus the pictures).

Now the upper deck does not have a shoulder wide enough for me to get out and A) not get hit by a car and B) open the door wide enough for me to wrangle Mac back into his carseat. So we had to wait until the upper and lower decks converged which was about a mile.

So I held on to his arm as we drove. It was so weird to have him just sitting there hanging out having fun while I was silently freaking out that I was going to get pulled over and then have to call my husband and tell him our kid just got repossessed because I didn't have him in a carseat!


As soon as we got the the end of the split, I promplty pulled over onto the very roomie shoulder of IH35. I still didn't get out, I practically crawled into the backseat and buckled Mac into his carseat properly. I think what happened is that when I picked him up from daycare he was holding his sippy cup and then when I put him in his carseat he threw it. I had put his arms threw the shoulder restaints but after picking up the sippy cup and having the "do you still want this or no" convo with my one year old and supsequently picking the sippy cup up again actually buckling him into the carseat was, um, skipped. So he just slipped his arms out and hopped down to come see what the big deal was about the front seat.

I am not happy that I was destracted enough to not continue buckling him into his carseat but I am happy that at least it was rush hour and we were not traveling fast at all. If we had been I can assure you there would be no pictures, promise. After he was strapped back into his seat we got back on the road and made it home without any other problems or baby carseat escapes.

2011 Texas Inauguration


This past Tuesday was the Inauguration and I (was) volunteered to work one of the gates checking tickets. It was cold, windy and so much fun! The gate that I had to work was very close to the stage. See...

As I mentioned it was cold. It wasn't supposed to be so I left my nice warm wool coat at home! Luckily my co-worker let me take hers! This is Debbie and me before it started.

The Governor and Lt. Governor were sworn in by the Honorable Wallace B. Jefferson, Chief Justice of the Supremem Court of Texas. I could only get the back of Perry and Dewhurst heads while they were being sworn in but I got Jefferson :)

And for working all the volunteers got a ticket to the BBQ, however, we were completely frozen and had lost all feeling in our feet so we went to the Chili Parlor instead of standing in a line for an hour to eat BBQ (since in the next 2 months we will eat our weight in free BBQ). Please excuse my ugly windblown hair.

It was a fun day, I was out of the office for most of the day so it made the day pass a lot faster than just sitting at my desk!!
